As increasing age is normally associated with a declining health capital, aspects of preserving a certain level of health becomes more and more important for aging individuals. As many illnesses such as obesity or cardiovascular diseases are, among others, due to increasing diet-related health problems, an evaluation of the nutrition information and decision behaviour of older consumers seems to be important in order to find out whether these consumers make informed and healthy food choices.

This doctoral thesis starts from this initial situation and examines the information and decision-making behavior for functional foods from various viewpoints. Firstly, a theory-guided model to identify relevant determinants and causal relationships is developed and empirically tested on the basis of a conceptual framework. Secondly, specific investigations are conducted to clarify how age influences consumer’s nutrition information and decision behavior by evaluating how variables and causal relationships within the information and decision behavior model change as age increases.

The results show differences in the constructs and the construct relationships of information and decision-making behavior with ongoing age. In this context the author gives insights into the perception and evaluation of the current configuration of a nutritional labelling system.

Thirdly, the author further examines to what extent different components of a nutritional labelling system are preferred by different age groups. The results provide evidence here that the currently popular nutritional labelling practice does not match the information needs of consumers of all age groups. As a result, this book gives valuable indications for the design of age-group specific nutritional labelling systems.
